Validation of Steins/Arla Foods method for lactate fermenting clostridia in milk

One of the most serious and economically important defects caused by clostridia in milk products is the late blowing of semi-hard cheeses.Clostridia occur naturally in soil and can contaminate milk through crops contaminated by dung and soil followed by a less successful silage process, that give them opportunity to grow unaerobically. When anaerobic conditions occur, such as storage of semi-hard cheese, they ferment lactic acid to butyric acid and the gases CO2 and H2.At the fusion of Arla and MD Foods, a series of changes were conducted on the MPN method for lactic acid fermentation for clostridia in milk. These changes resulted in an increased accuracy due to an increased number of test tubes and the change of media from MRCM to BBB, Bryant & Burkey Broth, that was thought to be more selective for Cl. tyrobutyricum, the organism mostly found in hard cheese. When the number of dairy farmers that were given quality reduction fines increased, the new method was suspected and a validation was conducted.The validation included inoculation of different clostridia and bacillus strains into BBB substrate and enzymatic testing of positive samples with Rapid ID 32A.

Frequency of unsuccessful milkings in automatic milking rotary : effect on milk yield, lactose content and somatic cell count at udder quarter level

Developments in milk production are heading towards fewer but larger herds where the milking process is often fully automated. Automatic milking systems were launched in the 1990?s and in the year 2010 the Automatic Milking Rotary (AMR) was introduced. As a rule there are no supervision personnel present during the milking event in systems with automatic milking. This means that there is a risk that cows can be incompletely milked in one or more udder quarters, for example if the robots fail in attaching the milking cups or if the cow kicks off the milking unit.

Vid mjölkning i automatiska mjölkningssystem finns möjlighet att separera mjölken på fjärdedelsnivå redan vid mjölkning, detta sker dock inte idag.

The aim with the literature study is to inform about the risks that exists in large dairy farms(with focus on mastitis and hoof health) and to inform about the milk industry in Sweden.Personal comments from two study visits (Nötcenter Viken and Vadsbo Mjölk AB) arelinked together with the literature and forms into a discussion regarding sustainableagriculture versus the milk cow's welfare.The profitability for Sweden's milk farmers have decreased because of the decreased milkprice and current inflation. This leads to an increase in herdsize in order to make a profit.The milk cow herds in Sweden becomes fewer year by year and the herdsize increases. Theincreased herdsize can cause a decrease in the time the farmer spends per animal. This canaffect early disease detection and prolong the animals suffering.Swedish Board of Agriculture published (2008) statistics showing that today's milk cow ismedicated primarily because of two reasons; mastitis or hoof problems. Mastitis is thereason to two thirds of all treatments that are carried out.

By analyzing the machine during production, having contact with different suppliers, searching internet for information, 3d-cad drawings and the complementary with personal experiences, this machine has  been evaluated and as a result of this new problem has come to be known.The discovered problems was analyzed and resulted in new suggestions for alternative options. Later the most functional results was chosen and put as a suggestion for the new model.A new machine built with the suggestions from this report assures to be well adapted to the environment at Gefleortens Mejeriföreing and the problems it causes..

The effect of vegetable fat on cheese yield and cheese properties

The production of cheese is in continuous development with objectives to in-crease productivity, achieve changes in shelf life and functional properties of the products. One concept in the development is to substitute milk fat with vegetable fats and oils in the manufacture of cheese. The objective of this study was to investigate effects on cheese yield and cheese quality of 4 different semi-hard analogue cheese products produced by substituting milk fat with vegetable fat, each analogue cheese with a specific mixture of vegeta-ble fat. As reference a cheese produced with anhydrous milk fat was used. The yield and recovery of fat and protein were determined by recording the weights of each cheese direct after press and after 20±2 days of storage and analysis of the composition of the cheeses after 20±2 days of storage. The cheese was fur-ther subjected for texture profile analysis in a TA-XT Plus Texture Analyser and analysed with Differential Scanning Calorimetry (DSC) to examine whether the fat behaves similar in the cheese as in pure form in respect to its thermal properties. The cheese yield was not significantly different when using different fats. Differ-ent amounts of water were absorbed during the water cooling.

The study was carried out at the Kungsängen Research Centre, Department of Animal Nutrition and Management, Swedish University of Agriculture Sciences, Uppsala. The technical development in dairy production has resulted in a housing system where feeding and milking is done automatically without human contact, a so called automatic milking system. The motives for utilising an automatic milking system, is to increase the animal welfare and to decrease the need for manual labour. However, the system does involve a change for the animals, among the effects is the deprival or the diminishment of a chance for synchronous behaviour and the animals have to agree among themselves in which order they use the feeding stations and the milking unit itself. How and if this affects the animals well-being and production is yet to be solved. Cows that show strong signs of estrus are desirable and the trait is included in the Swedish breeding goal. A strong heat makes it easier to inseminate at the right time and to avoid long and expensive days open. Since ten years the heat strength is scored from one to five by the farmer and reported to the milk-recording scheme and AI scheme. A shorter dry period length has in studies abroad showed some positive effects among high yielding dairy cows. Among other things it has been suggested that the periparturient metabolic stress becomes lower, that the fertility is improved and dry off becomes gentler for the udder, due to a lower milk yield. The milk yield is generally reduced during the first period after calving, especially among primiparous cows. The aim of this master thesis was to investigate how Swedish cows were affected by a shortened dry period, regarding milk yield, metabolism, health, body condition and body weight from two months before calving to some weeks after calving. Effect of cow traffic system on cow performance and AMS capacity

Robotic milking in Automatic Milking systems (AMS) is proposed to reduce manual labour and at the same time increase milk yield by increasing milking frequency. In order to increase milking frequency, it is essential to have well-functioning cow traffic. Investing in an AMS is a great capital investment for the farmer, thus it is of major importance to ensure maximal AMS capacity. This study investigated the effect of the traffic systems Feed First? and Free cow traffic with and without waiting area (WA) on cow performance and AMS capacity.

This study was performed to investigate the bacteriological quality of French cheeses made from raw milk. Fifty cheeses of this type were purchased from Swedish retail premises. The methods described by the Nordic Committee on Food Analysis (NMKL) were used to determine the number of Enterobacteriaceae, presumptive Escherichia coli, coagulase positive staphylococci and Listeria monocytogenes. In 32 cheeses (64%) the number of bacteria mentioned above exceeded the determined maximum value. Thirty samples (60%) showed high counts of Enterobacteriaceae.

Earlier studies have shown that musculoskeletal disorders among animal keepers are more frequent than in other occupations. Most of the farms have expanded and the farmers who used to work alone have suddenly become a work manager with several employers. There are only a few studies made on the work environment in dairy farms. Our study is based on a questionnaire and is a part of a project called large dairy herds. The study is based on data from the persons who milk most of the time. The questions they had to answer were about the work environment, musculoskeletal disorders and the psychosocial environment. The results of the survey are presented in diagrams and figures. It was common that the dairy producer themselves answered the questionnaire.
