Persistent pink in beef patties and hamburgers is a problem in the Meat industry that has been known for a few decades. It is a costly problem as it can give rejections of food by consumers. Studies around the world have tried to solve the problem but it still remains a mystery. There are many different theories of what is causing the red colour. Some of the most likly theories are reducing hemocromes, high microbiological loads, contamination of nitrite or organic/non organic substanses, DFD Meat etc.

ABSTRACT Skånskt Naturbeteskött is a group of approximately 30 beefproducers in the south of Sweden, who sell their products on the local market. They are certified with Svenskt Sigill, an organisation that works with animal welfare, environmental responsibility, safe food, open landscape and independent qualitycontrol. These producers have to fulfil certain demands regarding pasture and quality of the Meat. For this essay I did a market investigation in which I wanted to find out what qualities the Swedish market and the consumers want in their beef. The purpose was to find out what Skånskt Naturbeteskött could do differently to satisfy the market for locally produced beef in the south of Sweden. In the investigation I turned to those responsible for the beef in 12 supermarkets, 4 selling Skånskt Naturbeteskött today, 4 that sold it before but quit, and 4 that never have sold it but might be interested in the future.

This study has been done in order to map the supply of vegetarian and vegan food products in Sweden for business clients and consumers. A total of 665 food stuffs were found and classified into six categories. The biggest category was Meat substitutes with 302 products and the second largest category was sandwich spreads with 150 different products. Within the remaining categories a varied number of products were found; 86 beverages, 64 cooking accessories, 34 milk free ice creams and 29 plant based yogurts. Of the Meat substitutes were 28 only available for business clients.

This is a lost opportunity for both members and non-members, because Swedish Meats as a functioning cooperative could have exploited its dominant market position to positively effect producer?s prices.

Bakgrund: Vi äter allt mer kött. Tidigare forskning har visat på samband mellan högt köttintag och bland annat hjärt- och kärlsjukdomar och cancer. Information om skyddsfaktorer som minskar risken för folksjukdom är begränsad. Forskning om hälsa och sjukdom hos kvinnor är begränsad och därför behövs kvinnors hälsa lyftas fram. Syfte: Litteraturstudiens syfte var att undersöka huruvida ett högt köttintag kan påverka risken för folksjukdomar hos kvinnor.

In April 1986 an accident occurred at the nuclear power station in Chernobyl. Radionuclides were spread all over Europe including Sweden. Today there are still measurable concentrations of 137Cs in the different ecosystems in the contaminated parts of Sweden. The wild boar is the second most popular game in Sweden and today the Swedish population consumes more wild boar Meat than ever. As the wild boar population increases the wild boars are moving further north towards the contaminated areas, which creates an interest to study the state of 137Cs in wild boars in these areas. Muscle samples from wild boars collected during 2010-2013 were analyzed based on 137Cs content.

Hemoplus® (Sarstedt, Nümbrecht, Tyskland) is a guaiac-based fecal occult blood test developed for human medicine. Guaiac-based tests make use of the pseudoperoxidase activity of hemoglobin so the test is not specific for human hemoglobin and can therefore be used in veterinary medicine. Peroxidase-containing foods such as Meat (hemoglobin and myoglobin) can cause false-positive results of the test. To ensure that a positive result is not caused by diet, it has been suggested that canine patients should be fed a Meatless diet for a few days prior to fecal occult blood testing. The aim of this study was to evaluate the effect of commercial dog food on guaiac-based tests. In this study fecal samples from healthy dogs were analyzed with Hemoplus®.

The aims with the project were to investigate how forage consumption affect production and pigs behaviour around the feeding. This degree project was designed to follow 48 growing/finishing Hampshire*Yorkshire pigs, from 30-110 kg live weight, fed diets with or without 20 % forage inclusion. The pigs were divided in three groups due to dietary treatment. In the first group the pigs were fed 20 % of the energy in the feed ration by long grass/clover silage (LE) and the remaining 80 % by a cereal concentrate. Group two was fed chopped grass/clover silage mixed with cereal concentrate (HE) in the same amounts as LE.

Sigill Quality Systems has been certifying beef since the autumn of 2006 using the brand name label Swedish Sigill. IP Sigill (the certifying system for integrated production) encompasses the values: animal ethics, food safety, free range and environmental concerns. Product quality is not yet one of these values, and there is a variation in the quality of Swedish beef. Swedish Sigill wanted to investigate the factors that influence product quality, review which of the present regulations that have an influence on product quality and formulate new regulations with the purpose of enhancing the product quality (sensorial, technological and nutritional quality). A survey of quality parameters and factors that influence product quality was done in order to establish a scientific foundation to work from.

In this essay, Neolithic potsherds from Alby, Öland has been examined. The purpose was to investigate the connection between the lipid residues and the vessel shapes and ornament. To solve the attempt lipid and morphological analyses were executed. The lipid analysis revealed traces of different food residues and the morphological method showed various shapes and decors. The result indicates that the Alby ceramics has been used for cooking/storage of different fish and Meat dishes, as well as vegetables and that the vegetables doesn?t derive of cereals..

This literature review describes organic pig production in Sweden, its advantages and disadvantages, but also how its problems can be reduced or solved. Organic pigs have the possibility to a more natural behaviour than conventional pigs. With outdoor pigs comes problems, especially during wintertime, concerning water and feed supply, thermal environment and supervision. Parasites and leakage of plant nutrients are other difficulties that comes with outdoor pigs. All problems and difficulties can be reduced or put right through correct management.

Master thesis for Mechanical engineering, at the University of Lund. Incorporated in project Pondora.The purpose of this master thesis is to compare the existing one way packaging system with a proposed return crate system not yet available in Sweden. The comparison is focused on packaging handling in the grocery store.The purpose is also to investigate how operating return crate systems in Norway and Finland function, identify, the problems they have encountered and survey economic and technical aspects. The knowledge we hereby have acquired was subjectively evaluated in the thesis.The Swedish survey has a focus on Meat and bread. The surveys in Finland and Norway contain all the products utilizing the studied return crate systems.We have surveyed how the handling of transport packages for Meat & provision and bread is done in the store.

Zambia is a country in Southern Africa where poverty is widespread and the traditional keeping of local poultry therefore plays a crucial role in improving nutrition. Meat and eggs from poultry are important sources of protein but also of income. Improving the poultry production is thereby a method to fight poverty. For poultry, the access to light is an important factor for both growth and egg production. In this paper, the focus is on the traditional village chickens used for both egg and Meat production, how they are kept, their health and welfare and if the use of a solar lamp will influence their behaviour, growth and egg production. Three studies were conducted in Chibombo and Choma Districts in Zambia were 17 farmers were interviewed regarding the village chicken management of which six farmers participated in a solar lamp experiment.
