Several studies indicate that Swedish men consume more meat than women, more frequently appear in advertisements for meat and more often than women handle the grilling of meat. Production of meat is one of the largest contributors to greenhouse-gas emissions and thereby poses a challenge for ecological sustainability. Several Swedish politicians and authorities have argued that reduced Meat consumption is necessary to prevent continued global climate change. To understand and change consumption patterns we need to understand the consumer. This essay uses textual analysis to examine how Swedish men through text and images in three cookbooks use preparation and consumption of meat to construct different masculinities.

The discovered horse meat scandal has had great impact in the media and given many question marks as to how consumers should be facing meat labels. In the survey made lead consumers to ask themselves, whether they think about their consumption of reliable markings discovered at a risk and, if they have changed their consumption habits since discovered horse meat scandal. The survey was carried out in a grocery store in Karlstad city central, where the results show consistent numbers. People do not like change, and in this case, do not like to change their consumption patterns. Interviews were carried out with a municipality in the region that represents the consumer and three beef farmers that represents the producers.

Varför handla svenskt kött? : en konsumentundersökning

The background to the work bases on the consumers view around Swedish and foreign meat products, and how the attitude around the meat products is pursued in the shops. The consumers request high meat quality and security . Many consumers value local produced and ecological meat products but the price is too high. We have done verbal interviews with consumers on three different shops, where we asked questions and had dialogues around Swedish meat products where the consumers have told us their arguments and opinions about Swedish and foreign meat. The result shows that the majority of consumers consider that it is important to know that meat is produce in Sweden.

There are several reasons why organic chicken production is scarce in Sweden. Lack of slow growing (SG) strains combined with higher production costs, lower meat-yield and uncertainty of consumers? willingness to pay seems to be the main reasons. EU-legislations imply use of indigenous slow- or medium growing strains in organic production, nevertheless, fast growing (FG) broilers are often used due to their effectiveness. The aim also was to perform a theoretical analysis of these food additives and to make recommendations which food additives are acceptable and which should be excluded from the products in the future. Food additives which have already been approved are regarded as safe according to the safety evaluation methods available at the time of approval.

What factors correlates with the use of game meat, wild fish, berries and mushroom in Swedish households : urban vs. rural areas

This study was made to see too what extent Swedes uses consumptive resources such as berries and mushrooms, game meat and meat from fish in their household on a yearly basis. I have also looked into the difference between rural and urban areas in Sweden. Further aim was to determine what factors that correlates with the participation in berry and mushroom picking and the use of game and fish meat within the household. The study was conducted in form of a mail survey that was sent to randomly chosen persons in every municipality in the six northern most counties in Sweden and in the county of Stockholm. In addition a sample was sent to randomly chosen persons on a national level.The results showed there is a difference in use between rural and urban areas in Sweden in all 4 investigated consumptive resources.

Hygienisk kvalitet hos svensk älgfärs med avseende främst på förekomst av koagulaspositiva stafylokocker och Escherichia coli :

In this study the hygienic quality of minced moose meat was examined with regard to the prevalence of different bacteria. The methods used are described in NMKL, "Nordic Method Committee for Food". The results show that the levels of Escherichia coli and coagulase positive staphylococci in the meat are too high. The reason for this might be environmental factors, such as high temperature and humidity during the time when the carcasses are hanging and when the meat is cut up..
