Smak och konsistens hos ost : en litteraturstudie kring årstiderna och fodrets inverkan

To enjoy the richness of the grazing cows and high yield during the summers, even during the winter, cheese has been the way to store milk for thousands of years. Nowadays yield is high all year around and the cheese production is possible during all seasons. The aim of this paper is to investi-gate how and why the seasons influence taste and texture of pressed and ripened cheese. Milk is composed of proteins, fat, lactose and water but contains also a lot of Vitamins. The quality of milk is very important for the final constitution of cheese.

Vitamin A och E i relation till hästutfodring :

The purpose of this study was to examine vitamin A and E in equine nutrition and especially in relation to forages. A literature review was conducted to examine factors that influence the level of Vitamins present in forage, the vitamin A and E requirement of horses, and the absorption of vitamin A and E in horses. The influence of DM level on alpha-tocopherol and beta-carotene content in ensiled forage was investigated in a controlled ensiling study using baled silage and haylage. The results from the ensiling study were combined with data of vitamin A and E concentrations collected from literature. Calculations were done to theoretically establish how well the vitamin content in ensiled forage can cover the maintenance requirements of vitamin A and E in horses.

The aim of this study is to describe how a theme about Vitamins and analytical chemistry can be planed and implemented in a summer research school managed by AstraZeneca. The description of the theme is intended to be used as an instructor?s guide to upcoming summers-research-schools with the same theme. The students, which participated in the summer school of 2007, went to upper secondary school. During the summer school they were going to investigate the content of vitamin C in different fruits and vegetables.

The aim of this report has been to investigate the use of electricity energy before and after a conversion of foodservice. The ambition was also to highlight the food safety and the retention of nutrients in relation to the conversion. The methods being used were qualitative interviews, case studies, study visits and literature. The equipment and the use of energy was the same in 2008 as in 2011 for hot-holding of the tested component, sauce with ham. The chilled system used more than three times the energy and cost for one portion than one portion in the hot-hold system.

Bakomliggande faktorer till presbyacusis; en litteraturstudie av mindre kända faktorer

Background: More than half of the elderly (65-84 years) in Sweden have problems with hearing. In some studiesit?s discussed if age related hearing loss or presbyacusis is a part of natural aging or if it depends on underlyingfactors.The purpose of this literature study was to analyse scientific papers which illustrate correlations between lessknown underlying factors and presbyacusis, defined from psychoacoustic and/or neurofysiological tests.Material and method; Literature study where scientific papers, relevant to the purpose of the study and thequestions at issue were found in the database PubMed.The result shows that cardiovascular disease, hormones, diet and drugs have an influence on presbyacusis. Thehealth condition of the individual and their lifestyle matters, likewise estrogen which according to the results of 2studies has a protective effect on hearing.Conclusion; The studies show that heart attack and high systolic blood pressure in women have a correlation topresbyacusis, but not in men, - the hormone estrogen, - some Vitamins, antioxidants and diet have a protectiveeffect on hearing and studies show that smoking and alcohol have negative effects..

Background: Energy drinks have been found in everyday-stores since 1997 and their popularity have increased over time. Consumtion of energy drinks takes place because of their ability to increase concentration and to decrease fatigue but also because of the popularity the drinks have got. Target groups for these stimulating beverages are adolescents and young adults. Energy drinks contain caffeine, taurine, glucuronolacton, carbohydrates and B-Vitamins and voices have been raised about the eligibility for young people to ingest large quantities of these kinds of substances. Because of the properties of these substances it has become popular to mix energy drinks and alcoholic beverages to make up for the negative effects of alcohol and to be able to drink larger quantaties.Aim: The aim of this literature work was to investigate cognitive effects of the combination of caffeine in terms of energy drinks and alcohol and to determine if these effects could be harmful.Method: This literature work is based on five scientific articles retrieved from PubMed.

The aim of this study was to survey the labelling of drinks with pronounced healthbenefits found on the Swedish market today and to evaluate whether they are inaccordance to EU and national regulations or not. Especially the nutrition and healthclaims were looked into. This study shows that there are several drinks with claimedhealth effects being sold today. The process of approaching full functioningregulations in the EU on nutrition and health claims is proceeding slowly. A snapshotof today??s market of drinks with pronounced health effects shows that there aremultiple cases of misleading statements and interfering labelling on the products.Often it concerns nutritional labelling or health claims.

Meat and fish was the most important food for the Sami people in northern Scandinavia until the beginning of the 20th century. It is not so well known that the Sami people also used a lot of wild plants as food and medicine although that kind of food was relatively common among them until the end of the 19th century. The purpose of this master thesis has been to describe which plants the Sami people used in general and also which plants were the most commonly used, and when and how these plants were harvested. I also wanted to measure the quantities of Angelica archangelica and Rumex acestosa within traditional harvest sites. Furthermore I wanted to find out if the plant use differed among Sami groups geographically.

The Vietnamese Government advocates an increase in environmentally-friendly aquaculture and the fish Siganus guttatus (Rabbit fish) is a candidate for this. This fish eats mainly algae and can be cultivated in a polyculture.
