"Lärarna säger att man ska vara tyst och äta" : en kvalitativ studie av den pedagogiska lunchen

The title of the paper aims at a comment by one of the students during an interview. It reflects how most of the students experience the lunches in a specific school where the investigation is made. The question of pedagogical lunches has always interested me. Here I have used a method called the Grounded theory. I carried out a qualitative investigation with a number of methods such as interviews and participating observations.

Sensory studies of an energy dense drink for elderly people

The average length of life is increasing in the western world, hence the older population is growing. A common health problem among the elderly is malnutrition. Malnutrition causes decreased body strength and is associated with an amplified risk of infections, depression, fractures and increased mortality. The health care system is therefore faced with the challenge to prevent malnutrition among the growing population of elderly. This could be done by providing Nutritious foods developed to meet the specific needs of elderly. The overall objective of this project was to test a healthy energy dense drink based on oats targeted for the elderly consumers as a strategy to prevent malnutrition among elderly.

Safe retrieval of nutrients to improve food security

Safe retrieval of nutrients from human excreta to fertilize crops in order to gain adequate yields will increase food security and sustainability in agriculture areas with nutrient-poor fields. Safe and Nutritious food will meet the dietary needs of the individual which promotes public health and the ability of an active life. Human excreta should be considered as a resource instead of being assumed as waste. Human faeces and urine is excellent fertilizers which may close the nutrient loop if utilized properly. However, sanitation of the excreta is required to prevent disease transmission by reducing the content of gastrointestinal pathogens such as bacteria, viruses and parasites. The objective of this study was to in small scale evaluate the sanitation in a combined liquid compost and urea treatment by monitor the inactivation of bacteria and viruses at the combination three start temperatures, 45, 40 and 35 °C, and three additions of urea, 0.5, 0.75 and 1 % and reference, 0 % urea addition.

According to The National Board of Health and Welfare, about 200 000 elderly persons get some help or support with eating or nutrition problems. This was approximately 2 percent of the population. Older people in sheltered accommodation in community care were not able to manage their own nutrition. The older people were dependent on the food that was offered to them, when and how the food was served. This was a specific responsibility for the nursing staff.

Vegetabiliska skolmåltider : hållbara alternativ till blandkost som inspiration till skolkök

Huvudsyftet var att utveckla recept och tillaga hållbara och vegetabiliska lunchalternativ till en blandkostmeny. De nya måltiderna skulle vara välsmakande och näringsriktiga enligt Nordiska näringsrekommendationer (2012). Med hjälp av creative design togs tio vegetabiliska luncher fram och näringsberäknades med hjälp av Dietist Net. Det utfördes ett gillandetest och en gruppdiskussion med 19 gymnasieelever. Erhållen feedback användes i förbättringsarbetet av måltiderna.

Äta för att lära? : - pedagogers uppfattning om sambandet mellan mat och koncentration i förskola och skola.

Syftet med detta arbete är att undersöka vilken uppfattning pedagoger i förskola och skola har om sambandet mellan mat och koncentration. Anser de att mat har en betydelse för barns förmåga att delta i de verksamheter de befinner sig i? För att barn och vuxna skall orka vara delaktiga i sociala sammanhang och kunna vara koncentrerade krävs en näringsriktig kost. Vi har därför sökt att få fram vad som betraktas vara en näringsriktig måltid för barn. Genom enkätundersökning, intervju, observation samt litteraturstudier har vi försökt att få fram svar på dessa frågor.

Whole grain wheat : effects of peeling and pearling on chemical composition, taste and colour

The EU-project HEALTHGRAIN has suggested a new definition for whole grain which allows a small part of the grain to be removed during processing. By removing the outer part or the grain the hygienic quality will increase but it is not clear how the taste and colour is affected. So therefore in this study three different debranning methods, peeling, pearling and polishing, which remove the outer parts of the grains have been used on common and durum wheat. The dietary fibre and ash content, as well as germination was analysed in untreated, peeled, pearled and polished grains. The decrease in dietary fibre and ash was higher in grains that had been pearled compared to those that had been peeled or polished.

To the sewer systems households, industries and other activities are connected. The wastewater is collected at treatment plants where a Nutritious sludge is produced. The sludge does not only contain nutrients, but also hazardous substances originating from different activities in society. To reduce the flow of hazardous substances to treatment plants and to create a sustainable recycling of plant nutrients the Swedish Water & Wastewater Association has developed the certificate system REVAQ. This certificate requires a good quality of the sludge but also that the treatment plants maps the origin of the unwanted substances.

Vermicompost for reduction of vegetable waste - and a possible means to produce fish feed in aquaponic systems?

Aquaponics is a food production system consisting of a consecutive cultivation of plants and aquatic animals, fish or shellfish, in recirculating water. The plants feed on the Nutritious effluents from the fish tank and bacteria converts ammonia from the fish tank into nitrate that is absorbed by the plants. The plants receive nutrition and the fish gain purified water. The environmental impact of the production of fish meal and fish oil used in conventional fish feed includes a large consumption of fossil fuels with subsequent carbon dioxide emission. The aquaponic system can be made environmentally sustainable and self-supporting if supplemented with a vermicompost/vermiculture for the production of worm protein as a fish feed. Vegetable waste from the hydroponic part of the system can be reused as worm feed in the compost and the protein rich worms can be harvested, dried and grinded and brought back to the aquaculture as fish feed. As a first step in this direction, I have investigated the effect of recycling of vegetable waste in vermicomposts on the growth and number of earthworms (this was evaluated after harvesting). The hypotheses were that earthworms can be cultivated in the vegetable waste and that by adding manure to the vermicompost it is possible to obtain a nutrient content adequate to support a continuous worm harvest, in other words create a vermiculture. Eisenia fetida and Dendrobaena veneta were grown in 20 L bins containing peat mixed with either poultry or cattle manure. The proportions were 70% peat and 30 % manure. Discarded plant parts from lettuce cultivation was added to the vermicomposts (35 g per week) and water was supplied with 0.8 L per week.

The impact of climate change on agriculture in the Republic of Mauritius : a socio-econometric study on Mauritian farming

"Food security is a situation that exists when all people, at all times, have physical and economic access to sufficient, safe and Nutritious food that meets their dietary needs and food preferences for an active and healthy life" (FAO Summit, 2003, pp. 28).Food insecurity is of concern regarding the Republic of Mauritius (ROM) since it is defined as a net food importing country. (Farming news, 2008). The impacts of climate change followed by their complexity could potentially have an increased risk effect upon the social and environmental welfare as well as the economic drivers in the ROM (www, UNESCO1, 2009). The primary victims when it comes to the impacts of climate change are the Mauritian agricultural producers since agriculture is highly dependent on climate stability, therefore affecting the yields of the producers.
