The key elements of sourdough fermentation are the presence of active lactic acid bacteria (LAB) and yeast. Sourdough fermentation originates from the ancient Egypt. One theory concerning its onset states that a portion of bread dough was set aside to be baked at a later date and started to ferment spontaneously.Sourdough may contain a wide variety of microorganisms, mainly dominated by LAB and yeast. There are over 50 species of LAB that has been identified in various sourdoughs and more than 20 species of yeast. Sourdough fermentation has been shown to have various impacts on baked cereal good, most of which are attributed to LAB.This study addresses some effects of LAB from fermented milk products in sourdough and sourdough bread.

TAKK - Tecken som Alternativ och Kompletterande Kommunikation : En kvalitativ studie om hur förskolepedagoger arbetar med TAKK med barn med Downs syndrom ur ett språkutvecklingsperspektiv och vad de anser om att använda TAKK med barn utan särskilda behov
The purpose of this study is to examine how two educators at a preschool that is located in a neighborhood south of Stockholm works with TAKK with children who has Down syndrome in a language promotion purposes. The aim is also to investigate what teachers think about using TAKK with children without special needs and children with Down syndrome.In this study, I used qualitative research methods. I've used both Observations and interviews to get answers to my questions. The theories which I have used in this thesis is, socio-cultural perspective, including integration and segregated integration.In order to find out how the educators work with TAKK I have asked these questions:How do the educators work with TAKK with children with Down syndrome from a language development perspective?What do the educators express about using TAKK with children without special needs and with children who has Down syndrome?My conclusions to these questions are that the literatures I have read in many ways are consistent with how they work.
IKT i förskolan : Diskursanalys av två styrdokument och sex förskollärares berättelser om arbetet med IKT
The aim of the study is to learn more about the way preschool teachers work with Information and Communication Technology(ICT). More specifically, this study aims to explore how preschool teachers describe their experience of ICT, the conditions and opportunities to work with ICT, and their own knowledge and competence in the use of digital tools with preschool children. The research method consists of interviews with preschool teachers and Observations at five municipal preschools in Stockholm as well as an analysis of the relevant passages in the Curriculum for the Preschool and the Curriculum of Stockholm city. This study shows that there seems to be great variation in the amount of ICT tools present in preschools. Preschool teachers expect a lot from ICT, and the improvements that it can make on their work.
Barns medvetenhet kring bra kost - en observations- och intervjustudie bland elever i skolår 6
Vårt examensarbete handlar om vad bra kost är och om elever är medvetna om vad de bör äta för att klara av dagar med skola och fritid. Vårt syfte är att med undersökningarna söka komma fram till om eleverna i skolår 6 har en medvetenhet kring vad bra kost är och om de lever som de lär. Vi har genomfört en Observationsundersökning med en hel klass i skolår 6 för att få en helhet och sedan gjort en intervjuundersökning med sex utvalda elever från samma klass som vi observerade. Våra frågeställningar lyder;
? Är elever i skolår 6 medvetna om hur de bör äta för att få i sig tillräckligt med näring för att orka med en hel skoldag?
? Vem lär elever i skolår 6 vad man bör äta för att må bra?
? Om det finns en medvetenhet hos eleverna i skolår 6 vad de bör äta, följer de då detta? Lever de som de lär?
För att få svar på våra frågeställningar beskriver vi i vår kunskapsbakgrund olika teorier kring vad bra kost är och vem som har ansvaret för elevers medvetenhet kring bra kost.

Matematik och Språk : Betydelsen av språket i matematik för andraspråkselever
This paper investigates the methods used by teachers when teaching elementary mathematics to children with Swedish as their second language. The original mathematical terminology derives from Latin, Greek and Arabic, this terminology is not of great importance in this paper, the everyday language spoken in elementary classes when teaching mathematical concepts and calculations to younger children is. The use of everyday language is an advantage for children with Swedish as their second language as mathematical problems presented in a more plain language is easier to comprehend and solve than problems in mere numerals. Special teachers in home language classes often have the task of clarifying the mathematical concepts, introduced to the children during mathematical lessons, in the pupils first acquired language. A qualitative method was used in this study.

A Social Enterprise is a business that features a mixture of characteristics that originates from the third and private sector. A general conception of Social Enterprises is that they aim to improve social welfare by the use of sustainable business models. The mixture of social and business features has created ambiguity about how to define Social Enterprises. The purpose of this study is to clarify Swedish Social Enterprises as a phenomenon and to examine antagonism that arises from mixing the two different sets of organisational characteristics. This is achieved by conducting a qualitative study of ten Swedish companies that the market considers to be Social Enterprises.
På vilket sätt möjliggör pedagogerna barns delaktighet under matsituationen i förskolan?
This study focuses on oral communication in the classroom involving discussion and dialogue amongst pupils, but also between teacher and pupil. The overall aim is to study the choices regarding the group composition and working methods that might occur in four individual teachers? lessons plans with the intention of increasing the pupils? knowledge through oral communication. The main focus is to explore what the teachers think of the choices they make and how they believe these changes affect the pupils. It is also focused on how the teachers perceive their pupils? learning is improved by oral communication and how they incorporate all pupils, especially the pupils who rarely participate in classroom activity.The methods used are qualitative studies using interviews and Observations.

What is masculinity and what does it mean to be a man?This study involves two different areas: gender and literary reception. I wanted to find out what students think about masculinity and what possible strategies they use when they read and interpret literature. The investigation consists of three parts: an introductory survey, classroom Observations and an ending text analysis based on ten different questions. The investigation has taken place in second grade at an upper secondary school as part of the course Swedish B.
Co-opetition - Rollkonflikter i gränsöverskridande arbetskontexter
This thesis revolves around co-opetition and boundary spanning activities with IETF (Internet Engineering Task Force) as research case. The main objective is to through qualitative interviews and a passive observation of email conversations explore how the participants of IETF experience and is affected by a double membership where they sometimes are cooperating with their competitors. Theories states that boundary spanning activities can create role conflicts for these participants when different role-senders, IETF and the employer, send incompatible expectations. We also believe that this can have a negative impact on discussions and the standard development process, which is why we are conducting the passive Observations mentioned above.The result shows that the environment of co-opetition is a contributing factor to role-conflicts. These conflicts appear when participants are forced to choose between the role as an employee and the role as an IETF participant.
International Strategy Implementation: Understanding of Local Challenges in China
The thesis has two purposes. First, to give a practical insight into the challenges that Swedish companies might face, and how these challenges are tackled, when implementing strategy in a local area. Second, to develop a general applicable model as a conceptual contribution to the field of international strategy implementation in local areas. This empirical-driven thesis is written in a qualitative and explorative approach, where abduction is adopted in order to find mysteries and contribute to the forming of new theories. The empirical foundation is twenty-two interviews and Observations of three large Swedish companies.

The purpose of this paper was to investigate the special services for immigrants which are offered by Swedish libraries on their different levels regional, local and school as well as immigrants experiences of the library services and how these services and experiences conduct themselves to the development of the harmonic multicultural society. The methods used were interpreting reflexive interviews with immigrants and librarians. The guiding theory in this study was a three-phase model by Gillis Herlitz according to which a newcomer goes through three stages in an adaptation period. Phase 1 is a positive honeymoon phase, that later is replaced by phase 2, a critical disappointment period, which then ideally should be resolved in phase 3, where the individual reaches a balancing stage of cultural adaptation. The results of my Observations indicate that the performances of the different libraries seem to operate in a way that corresponds to the different phases in this model.
"Det är som med en kropp" : Pedagogers uppfattningar av lek och lärande i gestaltande lekpedagogiska praktiker
This study started with my interest in drama pedagogy practices. The aim is to investigate the teacher's conceptions of children's play and learning activities in drama pedagogy practices. Basically drama pedagogy means children and teachers creating play worlds together, usually based on various literary works, where they portray and play. Previous research shows that drama pedagogy as a method can enrich and develop children's play. Also, drama can be important for children's linguistic, social and aesthetic development.In this study, overall three interviews and two Observations at different occasions was carried out.
