The key elements of sourdough fermentation are the presence of active lactic acid bacteria (LAB) and yeast. Sourdough fermentation originates from the ancient Egypt. One theory concerning its onset states that a portion of bread dough was set aside to be baked at a later date and started to ferment spontaneously.Sourdough may contain a wide variety of microorganisms, mainly dominated by LAB and yeast. There are over 50 species of LAB that has been identified in various sourdoughs and more than 20 species of yeast. Sourdough fermentation has been shown to have various impacts on baked cereal good, most of which are attributed to LAB.This study addresses some effects of LAB from fermented milk products in sourdough and sourdough bread.

Antibiotic resistance associated with bacteria in irrigation water : a case study of irrigation ponds in Southern Sweden

The focus of this project was to characterize the occurrence of ESBL-­?producing bacteria in two irrigation water ponds in Southern Sweden. Samples were taken from two ponds nearby each other, from which analyses were made based on levels of community and individual isolates. Community samples were used for attempts for characterization of resistance patterns in irrigation water using the Omnilog PM-­?plate system. The growth of community microbiota in the presence of the following antibiotic substances was assessed; amikacin, gentamicin, kanamycin, penicillin G, ampicillin, piperacillin, trimethoprim, potassium tellurite and ciprofloxacin. Isolates were pure cultured using semi-­?selective media: LB, Rainbow Agar, mEnterococcus, 0.1 TSA and VRBD. A total of 177 isolates were isolated randomly. Each isolate was identified using the Omnilog GENIII-­?system of biochemical characterization. Further, the isolates were tested on Brilliance ESBL-­?agar for their ability to grow. Out of the total number of isolates, 30 were selected, preferably Enterobacteriaceae or Pseudomonas spp., based on their high similarity to library strain during the identification in the Omnilog-­?system. These were further characterized using Etest-­?sticks. Three selected strains were picked for further analyses using exogenous isolation for attempts to simulate horizontal gene transfer, and Omnilog PM-­?panels containing various antibiotics of interest. Selections of samples were chosen for molecular tests targeting plasmid-­?borne resistance genes CTX-­?M1, CTX-­?M2 and SHV. The method for assessing community-­?resistance patterns showed ambiguous data that was difficult to interpret; further optimization is recommended. For all tested PM-­?plates, generally greatest differences between substances were found among wells with the strongest concentration of antibiotic substance. A total of 175 isolates displayed ability to grow on ESBL-­?agar. Etests confirmed ability of isolates to resist many ?-­?lactam antibiotics and many were clinically resistant to certain substances. No plasmids were transferred during exogenous isolation. During molecular tests, a few matches were found for the CTX-­?M1 gene. Isolates analyzed with Omnilog PM-­?plates showed resistance to most compounds tested. The isolates showed greatest resistance toward penicillin G, ampicillin, amikacin, kanamycin and trimethoprim. In the study, it was established that resistance among bacteria was frequently occurring in the irrigation water, and ?-­?lactamase producing bacteria was very common. Extended studies are needed to assess the frequency-­? and occurrence of horizontal gene transfer (HGF) in this environment. Although some potential corresponding data is found, it is at this point not possible to determine whether the resistances are due to antibiotics used in veterinary medicine, human medicine or one additional reason is travel and trade. in irrigation water using the Omnilog PM-­?plate system. Bröd vid död i Kalvshälla : Analys av förhistoriskt organiskt grav- och boplatsmaterial från Barkarby i Järfälla socken, Uppland

This paper deals with prehistoric charred organic material, interpreted as bread, found in graves and in the underlying settlement at Kalvshälla, Järfälla parish in Uppland. The aim was to categorize the organic material morphologically and with the help of Fourier transformed Infrared spectroscopy (FT-IR) to see whether it was bread or not. Material from 13 graves (dated to Late Roman Iron Age until Viking Age) and 3 finds from the settlement have been analysed. Differences were noted both in shape, porosity and structure. Some of the material has been interpreted as cereal based foodstuff instead of bread due to morphological discrepancies.

Those are adapted to the Nordic climate and are perfect to grow in cereal rotations.

This paper shortly describes the coronavirus family, bovine corona viruses (BCV) properties and two diseases that BCV causes, winter dysentery and calf diarrhoea. The purpose of the study was to compare different diagnostic methods to detect BCV. Different methods are discussed, PCR, ELISA, immunofluorescense and virus isolation. Investigations were made in three different herds with winter dysentery; one dairy cattle farm with about 100 cows of different ages, one testing station for bulls with about 150 bulls and another small dairy cattle farm with 26 cows and 20 replacement heifers and calves. Faeces and nasal swabs were analysed with PCR and ELISA. The result shows that PCR seems to be a reliable method for detecting BCV but that the ELISA test can not be used as a reliable diagnostic method to analyse samples from animals with winter dysentery..

Konsumtionen av kyckling ökar och broilerkycklingens kött blir ett allt mer populärare matval. Forskare och producenter försöker upprätthålla den uppåtgående trenden och har därigenom utvecklat fodret, till exempel fiberrikt foder, för att kunna öka produktionen.Syftet med denna uppsats är att undersöka om fiberrikt foder för broilerkyckling kan effektivisera dess tillväxt och därmed öka produktionen så att efterfrågan kan tillgodoses.För att undersöka hur fiberrikt foder påverkar broilerkycklingens tillväxt har en litteraturstudie gjorts. Denna studie visar att det har pågått forskning inom detta ämne sedan 1950-talet.

High Cereal Prices : An analysis of the causes behind the increase in the world market price of corn, rice and wheat.

The purpose of this study is to examine which factors played an important role in the food price crisis of 2007-2008. Theories used are Microeconomic theory, explaining changes in supply and demand, and Macroeconomic theory, explaining the impact of changes in exchange rate on prices. A theory regarding speculation is also used to explain the impact of speculative activities effects on price. The method used is multiple regression analysis in order to determine the effects which ethanol production, oil price and dollar exchange rate had on the surge in the price of corn, rice and wheat.The data used is in monthly observations during the period 2005-2008. However, other factors are taken into consideration during the study, such as production quantity, stock size, economic growth, speculative activity and population growth.

Since the first wolf was taken as a companion animal a lot have happened with the biology of these animals. Is it possible that changes in the gut microbiota of the domestic dog are involved in the increasing numbers of animals with gastrointestinal disorders? Probiotics have been proven to promote the immune system of dogs by increasing concentrations of neutrophils and monocytes, decreasing the fragility of erythrocytes and increasing the serum IgG concentrations. Probiotics have also been shown to improve the fecal consistency, fecal dry matter and defecation frequency of dogs. The aim of this study was to find out if the bacterial counts in the gut of dogs differed from the gut of wolves, with the focus on lactobacilli.

The aim of this study was to investigate how the individual experience self-harm, and how this could be understood. The empirical material has been based on consisted of 28 life stories. 24 of them were written by women and 4 by men.

In using a qualitative method have I interviewed six women and six men taking care of their wives respectively husbands suffering from physical disease, disfunction or demental disease. The purpose was to find out whether male and female caretakers were differently influenced in their situation, relationship and in their partners, when they became caretakers of their spouse, depending on what the partner suffered from.The results showed that, when a husband or wife was hit by disease or disfunction, the caretaker was influenced both in the partners situation, the relationship and the role towards the partner. The couple still lived in a close relationship and could communicate. For the carers spouse suffered from a demental disease, there was no communication as before or possibility to remember. The carers also felt the loss of community, nearness and sympathy.

This thesis title starting from zero alludes to storstadssatsningen's democratic work being accomplished among immigrants in Malmö. My thesis examines which types of political participation storstadssatsningen were trying to increase. The goal was to turn the immigrants into political participants, but in many of the projects the democratic work had to focus on building a ground for democratic participation by bringing isolation to an end and teaching the Swedish language. This may have been the reason that there were not extensive forms of resources to put into projects actually raising the political awareness. Some of the projects can however be said to increase a very large number of types of political participation, both temporary and every day participation.
