Broad beans are becoming a larger crop in Sweden. This is probably due to the current discussion about the cultivation of soya beans that are imported to be used as protein fodder. Broad beans are a good break crop in a small grain intensive crop rotation and works as a protein source for animals together with for example ley. At present little research has been done on broad beans and more knowledge is needed. This study is about fungal communities and diseases on broad beans and the impact of these fungi on seed germination.

Persistent pink in beef patties and hamburgers is a problem in the meat industry that has been known for a few decades. It is a costly problem as it can give rejections of food by consumers. Studies around the world have tried to solve the problem but it still remains a mystery. There are many different theories of what is causing the red colour. Some of the most likly theories are reducing hemocromes, high microbiological loads, contamination of nitrite or organic/non organic substanses, DFD meat etc.

Survey of Fusarium species on yellow onion (Allium cepa) on Öland

It has been observed by both onion producers and a plant protection advisor on Öland (an island off the east coast of Sweden) that basal rot is the largest contributory factor to reduced onion quality and yield. Basal rot is mainly caused by species of Fusarium fungi. The aim of this study was to: a) investigate which species of Fusarium that can be found in onion produced on Öland, b) describe the symptoms caused by the different Fusarium fungi found and c) explore, through interviews with the onion producers on Öland, the mechanisms that may be involved in the observed increase in basal rot.Onion bulbs (Allium cepa) were sampled on two occasions. In total 181 onions from 11 different fields were analysed. In addition, eight onion producers were interviewed.

Salmonellosis in Peruvian guinea pig production : a study to evaluate the prevalence of salmonella spp and importance of the disease

In Peru guinea pigs are raised for meat production and salmonellosis is considered as a major problem. Studies have detected salmonella in animals with enteritis and pneumonia. Salmonellosis exists both in an acute and a chronic form. In the rural areas the diagnosis is made according to clinical signs and macro pathological findings at autopsy. The major systems applied for the guinea pig production are often classified as family, family-commercial and commercial. These systems differ in number of animals and how industrialised they are.

The limit for mercury in fish, set by health authorities, is exceeded in about half of the lakes in Sweden. Methyl mercury (MeHg) is the most toxic form of mercury and accumulates in fish. Therefore transformation of inorganic mercury (Hg) to methylmercury (MeHg) is an important process that we need to understand in order to possibly counteract the negative effects of mercury in the environment. The seasonal dynamics of mercury biogeochemistry is likely of great importance for the accumulation of MeHg in the aquatic food web. In thesis the chemical speciation and transformations of Hg and MeHg in bottom waters and sediments is followed in Ängessjön, a small lake located on the east coast in the middle of Sweden. The lake is not directly affected by any industrial pollution and concentrations of Hg in the sediment reflect the atmospheric deposition in this area, as well as processes taking place along the hydrological pathways from soil to lake. Samples from sediment, bottom- and streamwater were collected in average every second month during the period Feb.

A similar element, DUSE, has been found in front of ncRNAs in the social amoeba Dictyostelium discoideum and a part of this project has been to analyze the function of this putative promoter element through cloning and expression studies. A construct to analyze the func-tion of DUSE was successfully designed and introduced into D. discoideum but full expression studies were not finished because of shortage of time.

Cows affected by mastitis caused by Klebsiella (K.) pneumoniae often become seriously ill. In some cases herdproblems may occur. Contaminated bedding material is considered to be one of the most common risk factors for klebsiella mastitis. In a recently performed study in USA it was found, however, that more than 80 % of healthy, lactating dairy cows excreted K. pneumoniae in faeces.

To enjoy the richness of the grazing cows and high yield during the summers, even during the winter, cheese has been the way to store milk for thousands of years. Nowadays yield is high all year around and the cheese production is possible during all seasons. The aim of this paper is to investi-gate how and why the seasons influence taste and texture of pressed and ripened cheese. Milk is composed of proteins, fat, lactose and water but contains also a lot of vitamins. The quality of milk is very important for the final constitution of cheese.
